One of the most talked about revitalisations on William Street has just opened their doors, having been in the works for nearly 3 years. This heritage listed building went through a complete renovation and fit-out. There has been a full kitchen and bar put in, a new staircase and second storey balcony constructed, as well as a new alfresco area – just to list off a few things.
Canford were engaged back in October of 2021 to firstly assist in finding a suitable and reputable hospitality operator for the vacant William Street tenancy. An expression of interest campaign alongside SVN Property was launched, with numerous leads coming in as a result and a number of submitted business proposals. Daniel Sterpini (of Lucky Chan’s & Dutch Trading Co.) came to the table and a deal was done to take on the premises.
Canford were then engaged to take on and complete a tavern restricted liquor licence application for Fallow. With the strong trading background of Daniel, Joel and their team, a detailed argument on the locality that this venue would impact and a good objective evidence strategy, the liquor licence was granted.
Fallow opened it’s doors officially this month, and it looks amazing. It will be a welcome new addition to William Street, and a place to get to this Winter (check out the open upstairs bar).
